Root Vegetables
Did you know that some vegetables grow UNDER the GROUND?
It's true!
Carrots, beets, potatoes, yams, sweet potatoes, parsnips, onions,
and more all grow under the ground.

You have to wash root vegetables really well. They have dirt on them. Why are they so dirty?
Because they used to be in the dirt, under the ground. I think that's pretty cool.
Today we made roasted root veggies. We cut up a beet, parsnips, a sweet potato, a golden potato, and carrots. Then we poured about 5 tablespoons of butter and 2 tablespoons of coconut oil on top of the vegetables. We sprinkled the veggies with salt and pepper, and mixed them up. We dumped them onto our stoneware pan, and baked for one whole hour.| This was our first experience with beets! |

Spinach, Sausage and Bean Soup
Very rarely is soup a big hit around here. But this stuff is sooo good. I'm thinking of a ton of cliches right now that I am trying to suppress....
It knocked my socks off!
It really hit the spot!

This recipe originally came from Rachel Ray, and even if you are not into Traditional Cooking, it's still easy to make with broth and beans of your choice. I used spinach in place of the kale because I couldn't find it at our local grocery store. It tasted great!
Please keep our family in your prayers, as Josiah is having a tonsillectomy on Thursday. I'm looking up foods to try and hear gelatins are good for tonsillectomy recoveries. So maybe you'll see some homemade "Jell-O" in the near future. I also have my eye on some lemon and lime type recipes (Maryn loves lemon and lime), as well as homemade marshmallows. Any suggestions?
